BROWN BUTTER CHOCOLATE CHUNK OATMEAL COOKIES

These chewy brown butter chocolate chunk oatmeal cookies are my favourite cookie recipe. The burnt butter give the cookies a toffee like taste adding lots of flavour. These cookies have become a regular in our house and are kept in the freezer to pull one out at time when a craving occurs.

INGREDIENTS:

1 cup unsalted grass fed butter - room temperature

3/4 cup coconut sugar or cane sugar

2 free run eggs - room temperature

1 tsp vanilla

1 cup organic oats

2 cups organic all purpose flour **

1 tsp baking soda

1/2 tsp salt

4 oz chocolate - chopped

Additional options (pick and choose your favourites)

1/2 cup raisins

1/2 cup chopped walnuts

1/2 cup shredded coconut

1/2 cup chopped almonds

METHOD:

  1. Melt 1/2 cup of the butter over medium heat, stirring frequently. Once you see the butter developing brown spots and you start to smell a nutty aroma, take off the heat and pour into a small bowl to cool

  2. Cream together the other half of the soft butter as well as the cooled brown butter and sugar until smooth

  3. Add eggs one at a time

  4. Add vanilla extract

  5. Beat until mixture is light and fluffy

  6. In a medium bowl, sift together the flour, baking soda and salt

  7. Add the flour mixture to the liquid and stir until almost combined

  8. Add the oats, chocolate and your chosen additions

  9. Fold until just mixed

  10. Put the dough in the fridge for about 30 minutes to harden up

  11. Roll the dough out into a log and wrap with parchment paper

  12. Pop into the fridge for 1 hour or the freezer for later use

  13. Cut each slice about ¾ inch thick and bake at 350° F for 10-12 min
