GRILLED YELLOW ZUCCHINI
with tomatillo salsa
This delicious summer side dish is the perfect addition to your long weekend dinner plans! These baby summer squash come in a variety of colours from greens to yellows and are full of folate, vitamin C and beta carotene. The tomatillo salsa add so much flavour to this dish with the addition of basil and fresh bright shallots. Tomatillos are a sweet tomato like fruit that are actually related to the gooseberry family. Tomatillos are high in and flavonoids such as zeaxanthin and lutein as well as potassium, magnesium and fibre.
INGREDIENTS:
4 yellow zucchini
2 tbsp olive oil
2 cups of microgreens
3 tomatillo, diced
2 small shallots, diced
A few sprigs fresh basil, chopped
A few sprigs fresh parsley, chopped
Juice from ½ lemon
Pinch of sea salt
Pinch of pepper
GRILL THE ZUCCHINI
Turn the BBQ on to 400°F
Slice each zucchini into
3 slices lengthwise
Place them on a bake tray and drizzle with olive oil, salt and pepper
Grill the zucchini for 5 minutes on each side until they are soft
THE SALSA
In a medium size bowl,
add the shallots, tomatillos,
basil, parsley, lemon juice, sea salt
and pepper
Toss
Plate the zucchini
&
top with salsa
&
microgreens
