BEETROOT SLAW
with apples and radish

Beets come in a wide variety of shapes, sizes and colours. There are about 18 different kinds of beets ranging in root colour from deep purple, light purple, red, golden, pink stripped and white.

They antioxidants betalain, beta carotene, zeanthanin and vitamin C help to reduce fine lines and wrinkles, reduce the appearance of acne and increase brightness of the skin. Beetroots and beet juice can be eaten as well as applied topically on the skin.
Beets can be used in the kitchen in various ways. The root is removed from the bulb before being pickled, steamed, baked, juiced, shredded or thinly sliced to be eaten raw. You can use the leafy greens as you would swiss chard or kale.
