COCONUT ALMOND ENERGY BITES
One recipe - many flavours!
These coconut energy bites are quick and fun to make. They are naturally sweetened with dates and there is no baking required. These delicious little bite size snacks are are high in protein, antioxidants, potassium and fibre to help keep your blood sugar stabilized throughout the day.
CHOCOLATE RASPBERRY MATCHA LEMOn
Ingredients
2 cups coconut flakes
¼ cup almond flour
2 tbsp cold coconut oil
2 tbsp date paste
¼ tsp sea salt
Get Creative
You can make these energy bites into any flavour you like. Here are a few of my favourite combinations
1 tsp cinnamon & 1 tbsp cocoa powder
1 tsp matcha
1 tbsp lemon juice and zest from 1 lemon
1 tbsp dried raspberry powder
You can add dried fruit, fruit powders, coconut flakes, nuts, seeds, hemp, rolled oats, chocolate chips, flavoured extracts and herbs into any combination you like.

Add the coconut flakes into the food processor, and blend until the coconut flakes are almost a flour like consistency
Add the almond flour, coconut oil, date paste and sea salt
Process on high until everything is combined
If the dough looks a bit dry and not coming together, you can add another tbsp of coconut oil or date paste
Add in your creative flavours
Scoop a heaping tablespoon of dough into your hands and roll into a ball
Roll the ball in optional shredded coconut, hemp, rolled oats and place on a baking sheet
Repeat until dough is gone
You can eat these right away
Store in the freezer for up to 3 months and enjoy when you need a quick energy bite
